Javi Estévez is the owner and chef of La Tasquería de Javi Estévez, which opened in February 2015.
A true temple to modern Spanish cuisine, it is a superb example of what a young chef can do when he combines his talents with the traditions of Madrid cuisine.
It was he who managed to transform the preparation of offal into haute cuisine and it was this that became a symbol of Xavi’s commitment to the city and its tradition.
Thanks to La Tasquería, Javi was named Best Young Chef at the prestigious Madrid Fusión Congress in 2016, and was recently appointed Brand Ambassador for the Alimentos de Madrid M Productos Certificados, which guarantees the origin and high quality of products from Madrid.
Awarded a Michelin Star in 2019.

Reinterpreting offal is our philosophy. A creative twist to honour offal lovers and, in addition, a chance to show those who are less keen on this kind of food that our cuisine can be acceptable to everyone.
In the first three years since we opened, 6,900 dishes of trotters, over 17,000 pig’s tails, 41,000 starters, 3,400 suckling pig heads, and 6,000 kilos of tripe, shank and snout have been served, and these are just a few of the numbers that showcase our success.
